We like to eat pancakes. Whether it’s morning or evening, we eat pancakes whenever our hungry stomachs call for it. Pancakes are my daughter’s favorite food to eat. She can eat more than 3 pancakes in a couple of minutes.

Mind you, she is just 3 years old.

My father-in-law’s pancakes are not only super yummy but are also fluffy. The best part is that the ingredients are so basic that he can make them right away without me having go out and get other ingredients.

I bet the ingredients are also present in your kitchen.

He makes them every week and we never get tired of eating them. By far, these pancakes are the best pancakes my family has tasted….ever. I’m not being biased just because they’re made by a family better but they are super good.

Every time my wife has a breakfast potluck, her co-workers always request that she bring pancakes for the potluck. She tells me that her pancakes are the first ones to get eaten.

 

Grandpa’s Homemade Fluffy Pancake

So, without further ado, here is the recipe for the Grandpa’s Homemade Fluffy Pancake.

Grandpa's Homemade Fluffy Pancake

Ingredients:

  • 3/4 cup milk
  • 1 1/2 tbsp white vinegar
  • 1 cup all-purpose flour
  • 2 tbsp white sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 egg
  • 2 tbsp butter, melted
  • Cooking spray or oil

Instructions:

In a large bowl, combine both the milk and vinegar. Set the mixture aside for 5 minutes. This is done to sour the mixture. Don’t be afraid to use vinegar because your pancake won’t taste vinegar. This vinegar mixture is just a substitute for the buttermilk.

Whisk egg and butter into the “soured” milk.

In another large bowl, combine flour, sugar, baking powder, baking soda, and salt. Pour the dry mixture into the wet mixture. Whisk until lumps are gone. You can also use hand mixer to mixed the ingredients well.

Heat a large pan or skillet on medium heat and coat with oil or cooking spray. Pour batter onto the pan or skillet, preferably around 1/4 cup batter, and cook until you see bubbles on top of pancakes.

Flip the pancakes and cook until browned on the other side. If you desire to make small or bigger pancakes, you can adjust how much batter you pour on the pan or skillet.

If you ever want to make waffles, you can use the pancake batter for those. We’ve done it in the past and it simply works. So, this batter can serve has two purpose). Ain’t that great.
