Grandpa's Homemade Fluffy Pancake

This Grandpa's Homemade Fluffy Pancake is my daughter's grandfather's recipe (i.e. my father-in-law). He used to be a chef at a 5-star restaurant but is now retired. He tweaked the recipe to use the ingredients that we only have in the apartment.
Ingredients
  • ¾ cup milk
  • 1½ tbsp white vinegar
  • 1 cup all-purpose flour
  • 2 tbsp white sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 egg
  • 2 tbsp butter, melted
  • Cooking spray or oil
Instructions
  1. In a large bowl, combine both the milk and vinegar. Set the mixture aside for 5 minutes.
  2. Whisk egg and butter into the "soured" milk.
  3. In another large bowl, combine flour, sugar, baking powder, baking soda, and salt. Pour the dry mixture into the wet mixture. Whisk until lumps are gone. You can also use hand mixer to mixed the ingredients well.
  4. Heat a large pan or skillet on medium heat and coat with oil or cooking spray. Pour batter onto the pan or skillet, preferably around ¼ cup batter, and cook until you see bubbles on top of pancakes. Flip the pancakes and cook until browned on the other side.
