Tomato soup, anyone?
“What the heck are you talking about?” That is the usual response I usually get when I ask the people who I know the first question above. I should say that it’s the same exact response I get from I get all the time .
It may sound weird but I like this soup. I mean I really really love this tomato soup.
This handmade tomato soup is packed with nutrients and is great even for those who are trying to lose weight or control their weight. Some of the benefits of tomato soup are:

I like tomato soup. Almost every week, I make tomato soup. It has become staple in my diet and I feel great every time I eat it. It’s just a filling, cleansing soup that does great wonders to your body and your taste buds as well.
It’s deliciously rich in flavor and packs with gazillion of nutrients.
While soup doesn’t really go with summer season, this soup is great to have any season. Honestly, I really doesn’t matter to me if I eat this soup in summer, fall, winter, or spring. The taste of it brings me back to nature. The ingredients are so simple that they are easily found in your pantry.
You know me, that is, I like simple recipes with simple ingredients. That’s just how I am. If I can make something in no time and less ingredients, why would I go for a complicated recipe with complex ingredients. It just doesn’t make sense to me.

The last time I made this was last week. It was a quiet day when I was the only one at the house while everyone else was out gardening. Until, my lovely daughter came and disrupt everything. Haha.
My daughter loved the smell of the tomato soup. The rich, inviting smell of this soup surely caught her attention. Then, my parents-in-law came and, then, my wife. Last thing I knew, I was serving them a bowl of this homemade tomato soup.
In less than 30 minutes, the soup was gone. Nada, zero, zilch in the pot. Good thing, I was able to save some for me and some for when I go to work.
Without any further ado, here is the recipe for the best homemade tomato soup.
Friendly warning!!! You will get addicted to this recipe and so, will your family and friends (when they taste it). Be sure to warn them as well. I like to do this warning disclaimer from time to time to make sure everyone is warned of the potential effects of eating super yummy and tasty foods. Haha 🙂
Ingredients:
- 2 tbsp olive oil
- 1/2large yellow onion, cut into large wedges
- 28 oz canned tomatoes
- 1 1/2 cups low sodium chicken stock
- Salt and pepper to taste

Add olive oil over a medium heat in a large saucepan. Add onion wedges, canned tomatoes, chicken stock, salt, and pepper. If you don’t like chicken stock, you can use water instead. But I’ll tell you that chicken stock does wonder to the overall flavor profile of the tomato soup.
Bring to a simmer. Cook (uncovered) for 40 minutes. Stir from time to time and add salt and pepper as needed. You need to stir it from time to time to make sure the soup doesn’t stick on the saucepan. Because when it does, you are guaranteed to have a burnt taste in your tomato soup.
Having said that, if you prefer some burnt taste, which some people do, then, please do so. But just to warm you that your homemade tomato soup may taste differently.
And that’s about it with this tomato soup. It is so easy to make right? Everything is in one saucepan and you don’t need to go through so many steps to make a wonderful, tasty, and yummy soup.
Note: If you want the soup to be super-smooth, then, you can use blender or immersion blender to make the tomato soup smoother.
If you are using the immersion blender, try to blend the soup in batches. It can get messy when you use this type of blender.
