Ingredients
4 lbs. of your favorite [easyazon_link identifier="B015J5I160" locale="US" nw="n" tag="theprasav-20" popups="n"]chicken thighs[/easyazon_link], skinless and de-boned, cut into inch cubes
Pinch of [easyazon_link identifier="B000R95C8O" locale="US" nw="n" tag="theprasav-20" popups="n"]salt and pepper[/easyazon_link]
3 gloves of [easyazon_link identifier="B000NSFQJE" locale="US" nw="n" tag="theprasav-20" popups="n"]garlic[/easyazon_link]
2 tbsp of [easyazon_link identifier="B007FA1EBW" locale="US" nw="n" tag="theprasav-20" popups="n"]brown sugar[/easyazon_link]
First, rub salt and pepper on both sides on the chicken parts you selected. Set aside.
Crush and slice cloves of garlic. In a large glass bowl, combine brown sugar, barbecue sauce, and garlic. You need to add sugar to provide more sweet taste and garlic to add some garlicky taste in the sauce. Make sure that all ingredients are well-incorporated.
Set aside ½ cup of the sauce for basting.
Put all the cube-sized chicken thighs into the bowl. Once done, transfer the parts to the Pyrex baking dish. Marinate for at least 4 hours.
Prepare one side of the grill for high, direct heat. If you are using wood or charcoal, always make sure there's a cool side to the grill, that is, where there are only a few or no coals.
Remove the chicken parts from marinade. Thread the marinated chicken thigh cubes onto skewers. If you are using wood skewers, make sure to soak these skewers in water for 30 minutes prior to prevent them from burning when grilled.
Grill for 5-10 minutes (depending on how hot the grill is). After that, transfer them to the cool side.
Cover the grill and cook for 15-25 minutes.
Turn the parts over and baste them with the sauce you set aside for basting. Cover the grill again so the chicken can cook for another 10 minutes.
Repeat the process for the rest of the chicken parts left for grilling. Paint (haha) more sauce before serving.
