These Soft Cinnamon Sugar Pretzel Bites are a sure hit with my family. I have made these a couple of times now and they are always the first ones to get consumed.
Ingredients
  • FOR THE CINNAMON SUGAR BITES
  • 2 ½ cups warm water
  • 2 ¼ tsp instant yeast (1 packet)
  • 1 tsp salt
  • 2 tbsp melted butter
  • 1 tbsp brown sugar
  • 4 cups flour
  • 3 eggs
FOR THE BAKING SODA BATH
  • 9 cups of water
  • ½ cup baking soda
FOR THE CINNAMON SUGAR COATING
  • ¼ cup melted butter
  • ½ cup sugar
  • 2 ½ tsp cinnamon
Instructions
  1. In a large bowl, dissolve the yeast in warm water in a large bowl. Add the salt, sugar, and butter. Stir to combine.
  2. Add flour, a cup at a time, until dough is thick and no longer sticky. Poke the dough with finger. If it bounces back, then, it's good.
  3. Flour a surface and knead the dough for 3 minutes or until it forms a smooth ball.
  4. Get another bowl and spray it with oil. Place the dough in there. Cover and let rest for 30 minutes.
  5. Preheat oven to 425ºF or 220ºC.
  6. Bring 9 cups of water to a boil. Add ½ cup of baking soda.
  7. Pull bite-sized pieces from the dough. Drop into the baking soda bath. Boil them for 20-25 seconds.
  8. Remove dough bites from the bath and place them on a well-oiled baking sheet.
  9. Beat together eggs and brush them over the pretzel bites.
  10. Bake in oven for 15 minutes or until they are golden brown.
  11. In a small bowl, combine sugar and cinnamon.
  12. Dip each pretzel bite into the melted butter, then, roll in cinnamon sugar mixture.
  13. Serve warm.
