Chicken Macaroni Salad is a simple dish containing chicken and vegetables. This recipe is from my mother-in-law. This dish of hers is one of the best macaroni salads we've had for quite some time.
Ingredients
  • 1½ lb. elbow macaroni, cooked and drained
  • 1 lb. chicken breast, cooked and shredded
  • 1 cup mayonnaise with olive oil
  • 1 (20 oz.) can pineapple tidbits, drained
  • ½ cup celery, chopped
  • ¾ cup minced carrots
  • ½ cup raisins
  • ¾ cup shredded sharp cheddar cheese
  • Salt and pepper to taste
Instructions
  1. In a large mixing bowl, combine the mayonnaise, pineapple, celery, carrots, raisins, and cheese. Mix well.
  2. Add the pre-prepared macaroni and chicken breast into the same mixing bowl. Mix well.
  3. Add salt and pepper to taste. Add more salt and pepper, if necessary.
  4. Cover the mixing bowl and refrigerate until served.
