Sweet Potato Bombs With Marshmallow in Cinnamon Sugar

Sweet potato bombs are a good to way to use your leftover sweet potatoes from the holidays. Try this delicious recipe and get ready to make more.
Ingredients
2 cups of leftover mashed sweet potatoes
2 tbsp butter (softened)
Pinch of salt and pepper
5 tbsp brown sugar
3 tbsp cinnamon
Small marshmallows
½ cup all-purpose flour
1 egg
1 cup panko bread crumbs
Cooling oil
Instructions
In a large bowl, mix sweet potatoes, butter, salt and pepper, 3 tbsp brown sugar, and 1 tbsp cinnamon. Make sure that the butter is softened (not melted). You can up sugar and cinnamon to suit your taste.
In a small bowl, combine 1 tbsp brown sugar and 1 tbsp cinnamon, and the flour.
In another bowl, combine the rest of the brown sugar and cinnamon. Set aside. You'll be using this to coat the cooked sweet potato bombs.
Prepare three bowls, one for the flour mixture, one for the egg (beaten), and one for the bread crumbs.
Make a potato ball by scooping up a heaping tablespoon of the potato mixture. Place the marshmallow in the center of the potato ball and press the mashed potato around it to enclose the marshmallow. Roll into a ball.
Dip the ball into the egg and then, into the bread crumbs.
Repeat the process for the rest of the potato mixture. You can repeat the coating process (i.e. dip in the egg and, then, into the bread crumbs) for a thicker coating.
Heat oil in a pot over medium-high heat. Once the oil temperature reaches around 350 degrees, carefully drop the sweet potato bombs into the oil. Fry until each side is golden brown.
Transfer the the sweet potato bombs on a paper towel lined plate. Remove the excess oil.
Transfer the bombs to the sugar and cinnamon mixture, and, then, coat. Transfer the coated bombs into another plate.
