It seems like cupcakes are a staple in any event or even when there’s no event happening. Almost every week, my wife and I make cupcakes just because they are just great desserts and they don’t take forever to create.

From the classic red velvet to the unusual, but yummy maple and bacon cupcakes, my wife and I have tried and made so many different flavors of cupcakes. We love almost all of them.

Just the other day, we attend a birthday party. Of course, there were cupcakes. The only difference was that the flavor of the cupcake was something we’ve never done before. These cupcakes looked absolutely divine to look at.

Blueberry Lemon Cupcakes by My Organized Chaos

Ingredients:

FOR THE CUPCAKES

  • 3 cups flour {+ 2 tbsp flour}
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter room temperature
  • 2 cups sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • zest of 1 lemon
  • 2 tablespoon lemon juice
  • 1 cup whole milk at room temperature
  • 1 cup fresh blueberries

 FOR THE ICING

  • 16 oz cream cheese softened
  • 1/2 cup unsalted butter room temperature
  • 4 cups icing sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon freshly squeezed lemon juice

  • 3 cups all purpose flour
  • 1 teaspoon baking soda

  • 1⁄4 cup, 60 ml sour cream
  • 12 oz, cream cheese (package of 375 g)
