These Super Easy Baked Beef, Egg and Cheese Muffins are my family’s 20-minute meal/appetizer. They are so easy to make that my wife loves making them whenever we our stomach is in need of delicious yet quick-to-create meal.
Once in a while, my wife loves to make something that can easily be done in no time. I don’t blame her. I feel the same way. Sometimes, I like to create something that I can make in 10 minutes or less or something like that.
Just the other day, my wife finally decided to create what I have been craving for this past couple of months, that is, my desired baked beef, egg, and cheese muffins. I have seen my co-workers eating those muffins, and I couldn’t help but like what they have for lunch.
I knew those muffins were good. My wife made them, and they were super delicious. They were addictive. As a matter of fact, she made 12 muffins, and they were all gone within 2 hours.
She made to another batch so we could take some to work for lunch. Good thing it was easy to make them, and she had no complaints whatsoever.
These muffins became an instant favorite, and she has made several variations to suit what she wants and/or what I like to eat during a particular day. It is as if these muffins can be made with whatever ingredients we desire. These muffins are flexible and forgiving and you can’t make any mistakes when making these muffins.

What more do you ask for? The answer is nothing. These muffins are, by far, one of the easiest recipes to make. Even 8th grader or younger can make these and perfect them in no time.
So without further ado, here is the recipe for the Baked Beef, Cheese, and Egg Muffins. Hope you like them as much as we do.
Spray a 6-cup muffin pan with non-stick cooking spray. Add a tbsp of the ground beef in each muffin line.
Crack the eggs and put each egg white in each muffin liner. Top with a dash of salt and pepper to taste.
Sprinkle a tbsp of cheddar cheese on top of the egg white. Put more cheese, if desired.
Bake for 15-20 minutes at 350F or until the center of the muffin is completely cooked.
- 6 tbsp ground beef, cooked
- 6 egg whites
- Salt and pepper to taste
- 6 tbsp sharp cheddar cheese
