Sweet Potato Bombs With Marshmallow in Cinnamon Sugar

Every week, I buy sweet potato just because I like eating them.

Many times, I’m able to eat every single sweet potato I buy. This week, I had some sweet potatoes I have not used. I didn’t want them to go to waste or stay in our pantry for over a week or so.

So, I decided to create my sister’s favorite’s sweet potato bombs.

They are oozing with deliciousness and they are so easy to create. This sweet potato bombs recipe is always in my mom’s self-created cookbook. Of course, that cookbook is always ready. And so, is the recipe for the sweet potato bombs.

Many times, I used cream cheese for this recipe. Since I didn’t have one, I used small marshmallow.

Oh boy, it tasted even better.

I can taste both the marshmallow and the sweet potato. It’s heaven in my mouth.

 

Sweet Potato Bombs With Marshmallow in Cinnamon Sugar

Are you ready for this recipe? Some call this is one of the Paleo Spanish recipes. You can change whatever filling it is that you won’t, but marshmallow and cream cheese are some of the best fillings that I have used so far.

Any how, here is how to make sweet potato balls or bombs. I hope you like it.

In a large bowl, mix sweet potatoes, butter, salt and pepper, 3 tbsp brown sugar, and 1 tbsp cinnamon. Make sure that the butter is softened (not melted). You can up sugar and cinnamon to suit your taste.

In a small bowl, combine 1 tbsp brown sugar and 1 tbsp cinnamon, and the flour.

In another bowl, combine the rest of the brown sugar and cinnamon. Set aside. You’ll be using this to coat the cooked sweet potato bombs.

Prepare three bowls, one for the flour mixture, one for the egg (beaten), and one for the bread crumbs.

Make a potato ball by scooping up s tablespoon of the potato mixture. Place the marshmallow in the center of the potato ball and press the mashed potato around it to enclose the marshmallow. Roll into a ball.

Dip the ball into the egg and then, into the bread crumbs.

Repeat the process for the rest of the potato mixture. You can repeat the coating process (i.e. dip in the egg and, then, into the bread crumbs) for a thicker coating.

Heat oil in a pot over medium-high heat. Once the oil temperature reaches around 350 degrees, carefully drop the sweet potato bombs into the oil. Fry until it is golden brown.

Transfer the the sweet potato bombs on a paper towel lined plate. Remove the excess oil.

Transfer the bombs to the sugar and cinnamon mixture, and, then, coat. Transfer the coated bombs into another plate.

Note: Other variations of the sweet potato bombs include spinach and sweet potato frittata and paleo spinach casserole.
