Today, my family wen to the county fair. Who doesn’t love county fair?

We knew we were going to stay there for a while. We also knew we weren’t going to eat there because the meals there are expensive.

When I say expensive, I mean for an ice cream, be sure to set aside $4.50 for a small cone.

Before leaving to go to the fair, I had thought of what I could prepare for lunch. This way, we won’t have to spend a lot of money outside and just eat inside the house right after we go to the fair.

I tried to look on Pinterest but nothing seemed to strike me as good meal for today.

Then, I realized why not make my Pinterest famous recipe, that is, the Slow Cooker Pineapple BBQ Meatballs with a simple tweak.

Instead of using meatballs (we had none today), I thought of using chicken. We had breast, legs, and thighs.

I opted for thighs because chicken breasts tend to dry easily when used in crock pot.

So, I pulled the ingredients together. Luckily, we had them.

In about 5 minutes, I was done with my preparation. All the ingredients went into the crock pot and that’s it.

We left for the county  fair and came back 4 hours later.

I’ll tell you the smell of the house was fantastic. We could smell the barbecue and pineapple infused together. We got so hungry that we went straight to the table and prepared our table.

We sat down and ate. Holy guacamole. The taste was divine. It tasted as good as if not better than my meatballs version.

Literally, in just 15 minutes, the food was devoured.

This recipe became an instant hit with my family. I am pretty sure that my family will be eating this dish again and again. I, for sure, will bring this to potlucks and other parties.

What made this dish so special is the combination of sweet taste of the pineapple and sugar and the tangy taste of the barbecue. It’s a perfect blend of flavor to say the least.

The recipe is straightforward, and it only requires a few ingredients, which you can easily buy in your grocery stores.

One tip: I highly recommend using thighs without the skin and with bones intact. Chicken breasts tend to dry easily when used in crock pot. The bones in the thighs will bring out extra flavor to the already-flavorful dish.

Place your chicken into the slower cooker.

Pour the BBQ sauce, pineapple pineapple in juice, and brown sugar in the slow cooker. If you want to mix the three ingredients first before putting them into the slower cooker, that is fine, too. Mix all the ingredients to ensure flavor consistency when the meatballs are cooking.

Cook it in the slower cooker on high for 4 hours, then, turn down the slower cooker to low and cook for another 30 minutes or until the chicken is fully cooked.

Served while hot.
